If someone is buying a table to an event, we want to collect names of their guests. However, they may not have all 8 or 10 names at the time they purchase the table. They should be able to fill out names, if they have them, but not be required to do so. There should either be a "register" later check box for each registrant, or they should be able to be left blank and auto default to "Guest of..... donor/billing name"

Can you clarify how the anonymous group looks when someone registers that way?
This is already an option. Make sure that on the Field Options tab you have checked the box next to "Allow anonymous groups"
