Email Spacing Options
It would be nice if we could select spacing options within the body of an email

I think you are talking about the editor "thinking" for you and adding a double-space when you enter a carriage return...similar in Word, Outlook, and most email programs these days...much to my frustration, and including this comment box. If that is the case, hold down Shift while you press Enter.
Above, I just pressed Enter, and the editor double-spaced for me.
Here, I pressed Shift+Enter and no double-space.
